Decadent yet nutritious, this recipe will probably become a family favorite. Nobody will ever know that this cake is gluten-free! This cake is best served warm, about 20 to 30 minutes out of the oven. Any leftover cake will stay moist for days from the layer of frosting. 

Ingredients

Dry Ingredients

1 cups sorghum flour (or brown rice flour)
½ cups sweet rice flour
1 cups coconut sugar
¼ cups cacao powder
2 tablespoons finely ground chia seeds
¾ teaspoons baking soda
½ teaspoons fine sea salt

Wet Ingredients

¾ cups plain kefir  (cow, goat, or coconut)
½ cups water
½ cups melted butter
2 large eggs
2 teaspoons vanilla extract

Frosting

¼ cups butter
2 ounces unsweetened baking chocolate
½ cups coconut sugar
2 tablespoons arrowroot powder
¼ cups plain kefir
