Halibut and Potato Chowder

2 tablespoons extra virgin olive oil
1 large onions diced
2 slices organic bacon (optional)
4 cloves garlic crushed
2 teaspoons dried thyme
2 teaspoons dried dill
3 carrots peeled and diced
3 celery stalks diced
6 red potatoes peeled and diced
6 cups chicken stock (or vegetable stock)
1½ pounds halibut skin removed and cut into 1-inch chunks
1 handfuls parsley chopped
sea salt to taste
freshly ground black pepper to taste
