2 pounds boneless chicken breasts
1 small oranges peeled
1 tablespoons finely chopped fresh ginger
2 cloves garlic
¼ cups coconut aminos (or wheat-free tamari)
1 tablespoons maple syrup
½ teaspoons sea salt (omit if using tamari)


16 tapioca paper wraps (or rice paper)
1½ cups thinly sliced red cabbage
1 bunches green onions cut into thin strips
1 large mango thinly sliced
1 cucumbers cut into thin strips
3 large carrots cut into thin strips
1 red bell peppers cut into thin strips
