Radicchio, Fennel, and Arugula Salad with Maple-Cayenne Pumpkin Seeds

            This delightful salad has a lovely balance of bitter, sweet, salty, sour, and spicy! You'll find different flavors in each bite. Radicchio is a particularly bitter vegetable, but when paired with a sour dressing and sweet, spicy seeds, the bitter flavors are balanced and easier to consume. Serve this anti-inflammatory detox salad with a holiday meal!
