Serve this easy-to-make beef roast with roasted or sweet potatoes, a brussels sprout salad, and a steamed vegetable such as green beans. Sirloin tip roasts are leaner than other cuts of beef (and typically less expensive too), which makes them prone to becoming tough if overcooked. Follow my tips and cooking method below for perfectly cooked, tender roast beef.

Preparation Note

Set the beef roast on your counter for about an hour to let it come to room temperature before cooking. This helps ensure the beef cooks evenly.

Ingredients
3½ pounds beef sirloin tip roast
1 tablespoons extra virgin olive oil
1 medium red onions coarsely chopped
3 celery stalks cut into pieces

Rosemary-Spice Rub

2 tablespoons dried rosemary
2 teaspoons dried thyme
1½ teaspoons black pepper
1½ teaspoons sea salt
½ teaspoons ground allspice
