These healthy elimination diet pumpkin pie bars are so easy to make! You'll need a food processor and a high-powered blender. Serve with a mug of warm tea at the end of a holiday meal. 

Preparation Note

Soak the pitted dates in a bowl of hot or boiling water for about 30 minutes before making the filling.

Ingredients

Crust

1¼ cups cassava flour
½ teaspoons fine sea salt
10 tablespoons organic palm shortening
1 tablespoons maple syrup
1 tablespoons water
2 teaspoons raw apple cider vinegar

Filling

½ cups medjool dates pitted (packed)
1 cans pumpkin purée
1 cans coconut milk
¼ cups maple syrup
2 teaspoons agar powder
2 teaspoons cinnamon
1 teaspoons ground ginger
½ teaspoons raw vanilla powder
2 pinches sea salt
