This nourishing salad can be served as a main dish. Use a head of lettuce or use a bag of mixed organic greens. Serve with Roasted Delicata Squash for a complete meal. My children like to have the chicken on the side of their salad so I keep it all separate and assemble each plate individually. 



1½ pounds boneless chicken breasts pounded
1½ cups raw pecans finely ground
¼ teaspoons sea salt
¼ teaspoons freshly ground black pepper
6 tablespoons arrowroot powder
¼ cups water
3 tablespoons extra virgin olive oil


1 heads red leaf lettuce rinsed and spun dry
1 granny smith apples cored and thinly sliced
½ small red onions thinly sliced
½ cups dried cranberries


¼ cups extra virgin olive oil
3 tablespoons balsamic vinegar
1 tablespoons maple syrup
1 teaspoons dijon mustard
¼ teaspoons sea salt
