These soft and chewy gluten-free oatmeal cookies are full of pumpkin flavor and perfectly spiced! Serve with a cup of chai tea on a chilly autumn or winter afternoon. Chopped pecans or pepitas can be added for more flavor and crunch!


Wet Ingredients

½ cups unsalted butter softened
¾ cups pumpkin purée
¾ cups coconut sugar
1 large eggs
2 teaspoons vanilla extract

Dry Ingredients

1½ cups rolled oats
¾ cups blanched almond flour
½ cups tapioca flour
1½ teaspoons pumpkin pie spice
1 teaspoons baking soda
½ teaspoons sea salt

Other Ingredients

½ cups dark chocolate chips (or more)
