This classic whole grain gluten-free bread (also vegan, nut-free, and xanthan gum-free) can be made into a loaf of bread or a boule; my directions below explain how to do both. Serve bread with a hearty bowl of soup and some high-quality extra virgin olive oil on a chilly winter's evening.

Ingredients

Wet Ingredients

2½ cups warm water (110 to 115 degrees F)
1 tablespoons maple syrup
1 tablespoons active dry yeast
1 tablespoons extra virgin olive oil
⅓ cups whole psyllium husks

Dry Ingredients

1½ cups brown rice flour
1 cups teff flour
1 cups tapioca flour
½ cups oat flour
1½ teaspoons sea salt

Other Ingredients

2 tablespoons sesame seeds (optional)

This boule is fantastic. I really appreciate this recipe. I had tried making it using the same method with an older recipe from one of Ali's cookbooks, but this was the first time I tried it with the oat flour. My son thought it tasted just like whole wheat bread. Highly recommend, and I will definitely be making this one again. Thank you, Ali!

the end product is delicious. a heavy whole grain great texture. I had to add about 1/4cup more water as it was too dry to work. It could be i mismeasured- i'll be more careful next time as this is a repeat. serving it for dinner and will see if others notice that it is gluten free or not
