French lentils, also called Le Puy lentils, are named after Le Puy in Auvergne, a volcanic area in the center of France with ideal soil and climate for the growth of the lentils. French lentils have a delicate taste and a fine green skin with steel blue speckles. They usually can be found in the bulk section of your local co-op or health food store.

Ingredients
1 tablespoons extra virgin olive oil
1 medium onions chopped
3 cloves garlic crushed
2 celery stalks diced
2 large carrots diced
3 small red potatoes diced
1 teaspoons dried thyme
2 teaspoons paprika
1 teaspoons Italian seasoning
2 cups French lentils rinsed and drained
8 cups water
2 cups diced tomatoes
1 tablespoons red wine vinegar
3 teaspoons Herbamare (or sea salt)
½ cups chopped fresh basil
½ cups chopped parsley
