Thai Coconut Black Bean & Vegetable Soup
This easy Instant Pot black bean soup recipe will warm you up on a chilly winter night! Serve soup with a pot of brown rice and a Thai-style slaw if desired.
Place dry beans into a medium-sized bowl and cover with a few inches of water. Let them soak on your counter for about 8 to 24 hours. Then rinse and drain.
1 tablespoons avocado oil
1 small onions chopped
2 tablespoons Thai red curry paste
2 cups black beans (soaked for 8 to 24 hours)
2 cups water
1 cans coconut milk
1½ teaspoons sea salt
2 large carrots peeled and sliced
8 ounces white button mushrooms sliced
3 cups baby spinach
