Rice bowls are so easy to prep! Once all of the ingredients are ready to go, they can all be stored in your fridge in separate containers for quick lunches or meals to-go. Begin by cooking the rice, either on the stovetop or in an Instant Pot, then marinate the chicken, prep the veggies, and make the dressing. The ingredient list may seem long, but it is a very easy recipe to make! Wasabi powder is made from dried Japanese horseradish; it is very pungent and spicy. Be sure to use a brand that does not contain any extra ingredients or colorings. 

Ingredients

Chicken

2 pounds boneless chicken breasts pounded
½ cups wheat-free tamari
3 tablespoons brown rice vinegar
1 tablespoons maple syrup
1 tablespoons toasted sesame oil
2 teaspoons wasabi powder
1 teaspoons ground ginger

Rice

2 cups short grain brown rice
3¾ cups water
¼ teaspoons sea salt

Veggies

½ small heads red cabbage thinly sliced
2 large carrots julienned
1 large English cucumbers sliced
4 green onions sliced
1 handfuls cilantro chopped
1 handfuls sunflower sprouts

Dressing

3 tablespoons extra virgin olive oil
1 tablespoons toasted sesame oil
3 tablespoons brown rice vinegar
2 tablespoons wheat-free tamari
2 teaspoons maple syrup
½ teaspoons wasabi powder
½ teaspoons ground ginger
