This soup makes the perfect breakfast on day 3 when you are coming off of phase 1. Keep a few jars in your fridge at all times to have on hand for quick meals on the go. Feel free to use 8 cups of your favorite vegetables—try the combination I suggest below or your own creation!

1 tablespoons extra virgin olive oil
1 cups chopped leeks
1 cups diced onions
2 cups chopped carrots
2 cups chopped celery stalks
2 cups chopped cremini mushrooms
2 cups chopped zucchini
6 cups chicken bone broth
3 cups chopped kale
½ cups chopped parsley
sea salt (to taste)
freshly ground black pepper (to taste)

Optional Additions

1 pounds sautéed ground lamb
2 cups shredded cooked chicken (or turkey)
1 teaspoons grated fresh ginger
