This tasty rice dish is delicious served with a Vegetable Curry and Red Lentil Dal. If you cannot find brown jasmine rice in your area, then use brown basmati rice instead.



2 cups brown jasmine rice
3½ cups water
¼ teaspoons sea salt

Other Ingredients

2 tablespoons coconut oil
½ cups raw cashews
¼ teaspoons sea salt
1 teaspoons ground cumin
1 teaspoons black mustard seeds
1½ teaspoons ground coriander
1 bunches green onions sliced diagonally into ½-inch pieces
¼ cups Zante currants
½ cups chopped cilantro
