Serve this antioxidant-rich potato and kale curry with a few other curry recipes for an Indian-inspired meal. Palak Aloo is an Indian potato curry made with spinach. This version uses kale, but you can use fresh or frozen spinach instead.

3 tablespoons extra virgin olive oil
2 teaspoons finely grated fresh ginger
3 cloves garlic crushed
1 serrano chili peppers finely diced
1½ teaspoons cumin seeds
1 teaspoons garam masala
1 teaspoons turmeric powder
½ teaspoons curry powder
1 teaspoons sea salt
5 medium yukon gold potatoes cut into chunks
2 cans coconut milk
1 cups water
1 bunches kale chopped
2 teaspoons lemon juice
¼ cups chopped cilantro
