Brining is a great technique to infuse flavor into meat and help it retain moisture and not dry out. Serve with whipped sweet potatoes and roasted brussels sprouts or another favorite vegetable side dish. 

Preparation Note

Brine pork 4 to 6 hours ahead of cooking.

Ingredients

Brine

4 cups cool water
¼ cups kosher salt
¼ cups raw honey
1 cloves garlic smashed
3 sprigs fresh thyme
5 whole black peppercorns
1 bay leaves

Pork

4 boneless pork chops
1 tablespoons avocado oil
