These roasted potatoes are packed with a bright lemon flavor and the perfect side dish to serve with any herb-roasted chicken or fish such as a Whole Roasted Chicken with Lemon and Herbs, Lemon Butter Roasted Chicken with Green Olives, or Herb Roasted Halibut. Because of all of the liquid in this recipe, the potatoes will not end up crispy, but very tender. It might seem like too much liquid at first, but it will all get soaked up throughout the cooking time!

Ingredients
3 pounds baby potatoes cut in half
1½ cups chicken stock
½ cups lemon juice
½ cups extra virgin olive oil
2 tablespoons dried oregano
8 cloves garlic crushed
2 teaspoons dijon mustard
2 teaspoons kosher salt
½ teaspoons freshly ground black pepper
