Serve this simple pasta salad during the summer, when fresh corn is in season. Other veggies can also be added to the salad, such as diced sweet onion, diced avocado, or diced green bell peppers. Serve each bowl with a squeeze of lime and extra hot chili peppers!

Ingredients

Salad

12 ounces gluten-free pasta cooked al dente
1 cans black beans rinsed and drained
2 ears of corn
1 large red bell peppers diced
1 jalapeño peppers diced (or serrano peppers)
½ cups cilantro chopped

Dressing

6 tablespoons mayonnaise
2 tablespoons lime juice
1 teaspoons smoked paprika
½ teaspoons ground cumin
¼ teaspoons chipotle chili powder
½ teaspoons fine sea salt
