Though the ingredient list may look long, this salad is very easy to make and comes together fairly quickly once you have all of the vegetables chopped! Fresh basil and mint can be added to the salad for even more Thai flavors! Serve salad for a potluck gathering with friends or meal prep a batch on the weekend to use for lunches throughout the week.

Ingredients

Quinoa

1½ cups quinoa rinsed
2¼ cups water
2 pinches sea salt

Tofu

16 ounces extra firm tofu cubed
2 tablespoons wheat-free tamari
3 tablespoons avocado oil

Salad

2 cups thinly sliced red cabbage
1 medium red bell peppers cut into matchsticks
2 medium carrots cut into matchsticks
½ cups chopped cilantro
3 green onions thinly sliced

Dressing

4 tablespoons creamy peanut butter
2 tablespoons lime juice
2 tablespoons wheat-free tamari
2 tablespoons extra virgin olive oil
2 tablespoons water
2 teaspoons sriracha (or a few pinches red pepper flakes)
2 teaspoons finely grated fresh ginger
1 cloves garlic crushed
