These tofu and sticky brown rice nori rolls are easy to make, satisfying, and surprisingly filling. Sticky brown rice is easy to prepare, high in fiber, and gives these rolls staying power, while extra-firm organic tofu provides clean, plant-based protein and holds its shape well. Wrapped in nori, they work beautifully as a party appetizer and also make a great option for meal prep—perfect for school lunch boxes or quick, grab-and-go meals.
