White Bean and Olive Salad with Parsley Pistou
Pistou is similar to pesto but without any nuts or seeds. My version uses a little nutritional yeast to make it dairy-free. You can replace the nutritional yeast with a few tablespoons of shredded parmesan if desired! Serve with gluten-free focaccia bread or this cheesy grain-free focaccia bread!
You'll need cooked cannellini beans for this recipe. Canned or previously cooked beans can be used in this recipe.
3 cups cooked cannellini beans
½ cups castelvetrano olives pitted and halved
1 cups parsley packed
2 cloves garlic
⅓ cups extra virgin olive oil
1 tablespoons lemon juice
1 tablespoons nutritional yeast (optional)
¼ teaspoons sea salt
