Black Rice and Cucumber Salad

Ingredients

Rice

1½ cups black rice
3 cups water
1 pinches sea salt

Salad

1 large English cucumbers thinly sliced
3 green onions thinly sliced
½ cups finely chopped cilantro
2 tablespoons sesame seeds toasted

Dressing

2 tablespoons toasted sesame oil
2 tablespoons brown rice vinegar
2 tablespoons coconut aminos
1 teaspoons finely grated fresh ginger
