Butter beans, or lima beans, are creamy and soft, which is how they get their name! These beans are simmered in a rich broth with ham and onions to create a savory and comforting dish. Serve with Garlic Braised Collard Greens and Cornbread for a Southern-inspired meal. This recipe can be made with lima beans cooked at home, or canned lima beans if you are short on time. Using a homemade chicken stock will add more flavor to the dish, but store-bought stock can also be used. 

1 tablespoons extra virgin olive oil
1 medium onions diced
10 ounces ham diced
2 cloves garlic crushed
3 cups cooked lima beans
4 cups chicken stock
1 bay leaves
½ teaspoons kosher salt
¼ teaspoons freshly ground black pepper
