Serve this flavorful red bean and rice stew with plenty of chopped fresh cilantro, sliced jalapeños, and cooked basmati rice. If you eat meat, try sautéing a few sliced andouille sausages and serving them with this stew.

Preparation Note

Soak your dry beans in a bowl of water for at least 8 hours before making this. If you want to make this for dinner, then soak the beans in the morning, before you go to work.

Ingredients
2 tablespoons extra virgin olive oil
1 medium onions chopped
5 cloves garlic crushed
2 teaspoons smoked paprika
2 teaspoons dried thyme
1 teaspoons black pepper
¼ teaspoons ground allspice
2 cups red beans (soaked for 8 hours)
3 cups water
2 cinnamon sticks
2 bay leaves
1½ pounds sweet potatoes peeled and cubed
1 large green bell pepper chopped
3 celery stalks chopped
1½ teaspoons sea salt

Garnishes

1 limes cut into wedges
1 large jalapeño peppers thinly sliced
½ bunches cilantro chopped
