Mexican Pink Beans and Rice

            This easy Instant Pot rice and beans recipe comes together quickly once the beans have finished soaking. Serve rice and beans with sliced avocados, chopped cilantro, and lime wedges for a delicious and easy plant-based meal!
Preparation Note
        Sort through the dry beans and remove any damaged or shriveled ones. Place the rest into a bowl and cover with several inches of water. Let the beans soak on your counter for 8 to 24 hours, and then drain and rinse.
