My children adore a salad made with fresh sweet carrots, cucumbers, and garbanzo beans! The apple cider vinaigrette is one of their favorite salad dressings. They also like it tossed with thinly sliced napa cabbage and peeled mandarins—another easy side dish for a family meal. We also use this dressing for making impromptu grain and bean salads. For example, combining cooked quinoa, white beans, parsley, and green onions with this dressing creates a delicious, nutritious quick lunch!

Ingredients

Salad

2 heads green leaf lettuce rinsed, torn, and spun dry
2 cucumbers sliced
4 carrots cut into ¼-inch thick rounds
2 cups cooked garbanzo beans
1 handfuls microgreens (or broccoli sprouts)

Dressing

½ cups extra virgin olive oil
cups raw apple cider vinegar
2 tablespoons raw honey
2 teaspoons dijon mustard
¾ teaspoons Herbamare
1 teaspoons dried dill
