Cumin roasted carrots with tahini sauce are a delicious twist on the classic roasted carrot. The creamy and tangy tahini sauce pairs well with the earthy flavor of the carrots. Serve this as a side dish with your favorite baked chicken or fish, or to top a vegetable packed grain bowl

Ingredients

Carrots

2 pounds carrots peeled and cut in quarters lengthwise
2 teaspoons extra virgin olive oil
½ teaspoons ground cumin
½ teaspoons kosher salt
¼ teaspoons freshly ground black pepper

Tahini sauce

2 tablespoons sesame tahini
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 tablespoons filtered water
2 cloves garlic minced
1 teaspoons raw honey
¾ teaspoons kosher salt
¼ teaspoons ground cumin

Optional garnish

2 tablespoons finely chopped parsley
