When kale is tender and young it is best eaten raw. You’ll find it is slightly sweeter and not very bitter. This salad pairs well with just about any meal. Serve it with a bean soup and breadsticks or baked salmon and black rice as part of a balanced meal. My children think this kale salad is one of the best and will eat platefuls of it!
