Green chili braised beef can be served with your favorite tortillas, sliced avocados or guacamole, diced white onion, and chopped cilantro for taco night. It can also be served over rice or stuffed into baked sweet potatoes. Make the full batch of this recipe even if you are only serving two or three people, as it freezes very well! Be sure to use a high-quality beef roast! Look for 100% pasture-raised (also known as pasture-finished) beef. The meat from cattle raised completely on grass contains less fat and has an anti-inflammatory fat profile compared to conventional grain-fed beef. Because of the lower fat content, this type of meat does best with long, slow cooking to tenderize it.

4 cloves garlic peeled
1 teaspoons ground cumin
1½ teaspoons sea salt
1 cups water
