Be sure to use a high-quality beef roast! Look for 100% pasture-raised (also known as pasture-finished) beef. The meat from cattle raised completely on grass contains less fat and has an anti-inflammatory fat profile compared to conventional grain-fed beef. Because of the lower fat content, this type of meat does best with long, slow cooking to tenderize it.
