When I make meals like this I like to place everything out on the counter and let the children make their own plates with the ingredients they prefer most. They never add fresh tomatoes but love cucumber salsa! If you want the dressing less spicy then remove the seeds from the pepper before blending. If you want it really spicy, leave the seeds intact and just cut the stem off before blending.

Chicken Fajita Salad with Spicy Avocado Dressing

Ingredients

Chicken

2 pounds boneless chicken breasts cut into strips
1 limes juiced
2 teaspoons ground cumin
1 teaspoons paprika
½ teaspoons chipotle chili powder
½ teaspoons sea salt
extra virgin olive oil (or coconut oil for cooking)

Salad

1 heads romaine lettuce thinly sliced
4 cups thinly sliced napa cabbage
2 heirloom tomatoes cut into wedges
2 red bell peppers cut into strips
1 cups chopped cilantro

Dressing

2 small avocados
¾ cups water
¼ cups freshly squeezed lime juice
1 jalapeño peppers stems removed
1 cloves garlic peeled
handfuls cilantro
½ teaspoons sea salt
