This classic egg salad is quick to prepare and packed full of flavor. I like to eat in on whole-grain crackers, or Rosemary Cheese Crackers. It can also be served in an egg salad sandwich, or on top of a bed of mixed greens.

6 hard boiled eggs diced
2 tablespoons mayonnaise
2 tablespoons minced red onions
2 tablespoons minced raw dill pickles
1 tablespoons dijon mustard
1 tablespoons minced parsley
¼ teaspoons kosher salt
¼ teaspoons freshly ground black pepper
