This savory beet and beef stew is similar to traditional borsht, which is typically made with slow cooked meaty beef bones instead of ground beef, and includes potatoes and tomatoes. This nightshade-free version uses ground beef and beef bone broth. If you don't have a good homemade beef bone broth on hand use chicken stock or water. If you use water you may need to increase the salt to boost flavors. I prefer to use Herbamare or an Herbed Sea Salt in this savory recipe.

Ingredients
2 tablespoons extra virgin olive oil
1 large onions chopped
1 pounds ground beef
3 large carrots chopped
1 bunches beets peeled and chopped
1½ teaspoons Herbamare
1 teaspoons dried rosemary crushed
1 teaspoons dried dill
1 teaspoons dried thyme
½ teaspoons black pepper
4 cups beef bone broth (or water)
3 cups thinly sliced green cabbage
½ cups chopped parsley
