Herb Roasted Salmon
Use this recipe during Phase 2 and 3 of the Elimination Diet—the healthy omega-3 oils in the salmon will help to calm down inflammation in the body. This is my go-to “fast food” meal when I’m out of time and dinner needs to get on the table quickly. Serve with baked sweet potatoes or baked winter squash along with either sautéed dark leafy greens or a large raw salad.
2½ pounds wild salmon fillets
¼ cups fresh herbs (lemon thyme, dill, parsley, oregano, rosemary)
½ teaspoons Herbamare (or sea salt)
¼ teaspoons black pepper
2 tablespoons extra virgin olive oil
