Soaking raw pumpkin seeds for a few hours can create a delicious and nutrient-dense creamy salad dressing that pairs well with a fresh lettuce and vegetable salad. Use whatever varieties of fresh basil you have growing in your garden. Holy basil, lemon basil, sweet basil, and purple basil all work well!

Preparation Note

You'll need to soak the pumpkin seeds in a bowl of filtered water for 3 to 6 hours before making this recipe.

Ingredients

Salad

1 heads green leaf lettuce rinsed and chopped
½ bunches lacinato kale thinly sliced
1 bunches radishes chopped
2 small kohlrabi peeled and chopped
1 medium cucumbers sliced
½ medium sweet onion sliced
1 handfuls fresh basil chopped
1 handfuls parsley chopped
2 tablespoons finely chopped fresh dill

Dressing

½ cups pumpkin seeds (soaked for 3 hours)
½ cups water
¼ cups lemon juice
1 cloves garlic
6 tablespoons extra virgin olive oil
1 cups fresh basil
½ cups parsley
¼ cups fresh dill
½ teaspoons Herbamare
