This is a light and zesty salad the pairs well with Black Bean Soup, Chipotle Roasted Chicken, Paleo Beef Tacos, or the Slow Cooked Mexican Beef Roast.

Ingredients

Salad

8 cups baby arugula
½ cups pumpkin seeds toasted
1 small red bell peppers diced
1 avocados cubed
½ small red onions sliced

Dressing

6 tablespoons extra virgin olive oil
1 teaspoons finely grated lime zest
4 tablespoons freshly squeezed lime juice (about 2 small limes)
1 tablespoons coconut vinegar (or white wine vinegar)
1 cloves garlic crushed
¼ teaspoons sea salt
¼ teaspoons ground cumin
1 pinches ground cardamom
