Serve this anti-inflammatory detox salad as part of a balanced dinner or as a whole meal. Radicchio is a bitter "green" vegetable that helps to stimulate all aspects of digestion. It's especially helpful to serve bitter vegetables with animal proteins and fats to aid in digestion. 

Preparation Note

You'll need to pre-cook beets for this recipe. You can cook them in an Instant Pot or in the oven. Let them cool completely before adding them to the salad. 

Ingredients

Salad

2 medium beets cooked and chopped
1 heads radicchio chopped
¼ small red onions thinly sliced
¼ cups raw walnuts chopped
¼ cups cilantro chopped
4 medjool dates pitted and chopped

Dressing

¼ cups extra virgin olive oil
¼ cups grapefruit juice
1 tablespoons raw apple cider vinegar
½ teaspoons sea salt
