This dressing recipe is so nutritious and flavorful that it might become a family favorite. Walnuts are an excellent source of healthy fats, and recent research shows that eating walnuts can improve brain function and memory. Soaking walnuts overnight makes them more digestible and also creates a creamy white salad dressing!

Preparation Note

Soak the walnuts for 6 to 8 hours before you plan on making the dressing.

Ingredients

Salad

1 heads green leaf lettuce rinsed, torn, and spun dry
1 medium cucumbers sliced
3 carrots sliced
1 pints cherry tomatoes halved
1 handfuls parsley chopped

Dressing

½ cups raw walnuts (soaked for 6 to 8 hours)
¼ cups water
¼ cups extra virgin olive oil
1 large lemons juiced
1 cloves garlic
½ teaspoons sea salt
3 tablespoons chopped fresh chives
2 tablespoons fresh oregano
1 tablespoons fresh rosemary
1 tablespoons fresh thyme
