Since we live in the Pacific Northwest, we have access to fresh, wild salmon. In autumn we take our children to local rivers and watch the salmon run while the bald eagles fly above us. If you don’t live in a place with access to wild salmon, use this recipe with another variety of fish that is local to your area. Remember to always avoid using farmed salmon, otherwise known as Atlantic salmon, which is high in accumulated environmental toxicants. This salmon recipe contains a bouquet of citrus flavors and pairs well with the Steamed Vegetables with Lemon-Garlic Dressing and cooked quinoa for a balanced weeknight meal.
