This simple, nourishing soup is easy to make and perfect when you need something cleansing and light. Ginger contains powerful anti-inflammatory and antioxidant compounds that can inhibit the production of inflammatory chemicals produced within the body, reduce lipid peroxidation, and reduce free radicals. Ginger also upregulates the production of glutathione peroxidase—the body's most powerful antioxidant and detoxification enzyme! I would suggest grating in as much fresh ginger as you can tolerate. The soup tastes best using a homemade chicken broth, however, a light store-bought organic chicken stock can also be used. Serve with white rice or black rice if grains are suitable for your particular diet.

2 tablespoons extra virgin olive oil
1 medium white onion cut into crescent moons
1 pounds ground turkey
6 cups chicken stock
3 inches fresh ginger finely grated
6 cups thinly sliced green cabbage
2 cups chopped cilantro
sea salt (to taste)
