This uncomplicated, slow cooker chicken soup recipe is full of flavor and incredibly easy to make! Just make sure to soak the navy beans before you go to bed, then in the morning place everything into your slow cooker. Six to eight hours later, a nourishing dinner will be ready for you!

Preparation Note

To soak the navy beans, first sort through them and remove any damaged or shriveled beans. Then place them into a bowl and cover with several inches of cold water. Place the bowl onto your counter for 8 to 24 hours.

2 cups navy beans (soaked for 8 to 24 hours)
2½ pounds bone-in chicken breasts
1 large onions diced
3 large carrots sliced
4 celery stalks chopped
6 cups water
1½ teaspoons dried marjoram
1½ teaspoons dried thyme
1½ teaspoons dried rosemary
½ teaspoons black pepper
2 bay leaves
2 tablespoons extra virgin olive oil
2½ teaspoons sea salt
1 cups parsley chopped
