This mayo-free chicken salad is easy to make, especially if you have leftover chicken needing to be used up. Serve over mixed greens or lettuce leaves for a nutrient-dense low-carb lunch.

2 tablespoons extra virgin olive oil (or water)
2 teaspoons lemon juice
2 small avocados mashed
¾ teaspoons Herbamare
¼ teaspoons black pepper
2 cups cooked chicken diced or shredded
1 celery stalks minced
¼ small red onions minced
¼ cups minced parsley
