My children adore this lively, fresh salad. Of course, cucumbers are their favorite vegetable! Serve this simple salad with baked chicken, fish, rice, or beans.

½ cups diced red onions
½ cups chopped fresh mint
½ cups chopped parsley
2 tablespoons coconut vinegar
2 tablespoons extra virgin olive oil
½ teaspoons Herbamare (or sea salt)
