Poaching is a very easy way to prepare fish. The key to an excellent final dish is to create a flavorful poaching liquid first! The coconut-based poaching liquid in this recipe uses fresh ginger and turmeric to create a savory, anti-inflammatory base. If you can't find fresh halibut, use wild salmon fillets instead. Serve poached halibut over steamed greens, cabbage noodles, or white basmati rice, depending on what works well for your particular dietary needs.

1 tablespoons extra virgin olive oil
2 inches fresh ginger finely grated
2 inches fresh turmeric finely grated
4 green onions sliced
1 cans coconut milk
¼ cups water
1 tablespoons lime juice
1 teaspoons sea salt
1½ pounds halibut cut into fillets
¼ cups finely chopped cilantro
