This detox salad can be meal prepped and stored in your fridge with the dressing on the side. This is a great way to consume more raw vegetables! Onions and garlic are rich sources of thiols, which are organosulfur compounds that support the detoxification of many harmful chemicals, including heavy metals. Cabbage is an excellent source of glucosinolates, which supports the production of glutathione—the body's primary antioxidant; beets contain betaine, which acts as a methyl donor in the methylation cycle in the body. Carrots are a rich source of antioxidant carotenoids, which act directly as antioxidants in the body, quenching free radicals, and also upregulating the production of the body's own antioxidant defense system at the genetic level!

½ heads green cabbage shredded
